Ingredients:

  • 2 cups of all-purpose flour
  • 1 cup of grated coconut (fresh or desiccated)
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 tablespoon of sugar (optional)
  • 1/2 cup of water (adjust as needed)
  • 2 tablespoons of butter or margarine (optional for richness)

Recipe:

  • In a large mixing bowl, combine the flour, grated coconut, baking powder, salt, and sugar.
  • Mix in the butter or margarine until the mixture becomes crumbly.
  • Slowly add water, a little at a time, and knead into a smooth, soft dough.
  • Divide the dough into small balls and roll each into a flat circle, about 1/4 inch thick.
  • Heat a flat griddle or pan over medium heat and cook the roti on both sides until golden brown and cooked through, about 3-4 minutes per side.
  • Serve hot with your favorite side dish or enjoy it as is with a cup of tea.
