Dumbara Kithul Flour (kithul piti) is the starch of the kithul palm, dried and milled to a very fine, light pinkish white powder, in a 200g pack. It comes from Dumbara, the kithul producer at Kengalla near Kandy, and has the faint, distinct taste of kithul.
The flour is taken from the soft inner trunk of the kithul palm (Caryota urens). In Sri Lankan homes it is cooked with water or coconut milk and kithul jaggery into a smooth set pudding, cut into squares like the one on the pack, or into a thin kithul piti porridge. It also thickens sauces and desserts.
