MA's Kitchen Fish Ambulthiyal Paste is a ready-to-use paste for ambul thiyal, the traditional Sri Lankan sour fish curry known for its bold, tangy and peppery flavour. The dish is also valued for its natural preserving qualities, which is why it was traditionally cooked dry and kept for days.
The paste is built on garcinia (goraka) and black pepper, with ginger, tamarind, chilli, coriander, curry leaves and other spices, plus vinegar, garlic and onion. Use it with firm fish such as tuna. This pack holds 50g of paste.

How to use
Cut firm fish such as tuna into chunks and coat them well with the paste. Place the fish in a clay pot or heavy pan with a little water, cover and cook on a low heat, turning the pieces gently, until the liquid has evaporated and the spices cling to the fish in a dark, dry coating. Serve with rice.
