Harischandra Noodles with Kurakkan are dried noodles made from wheat flour, kurakkan (finger millet) flour and salt, sold in a 400g pack. The kurakkan gives the noodles a darker colour and a mild, nutty taste.
Harischandra has made noodles at Matara since 1966, and its noodles carry the Sri Lanka Standards Institution mark (SLS 420). The green and brown pack names the product in Sinhala, Tamil and English.
How to cook
- Bring plenty of salted water to the boil, add the noodles and cook for a few minutes, stirring to separate them.
- Drain and rinse, then fry with vegetables, egg, chicken or prawns and a little soya sauce.
- They also work in a simple Sri Lankan noodle dish with onion, curry leaves, chilli flakes and turmeric.
