Idiappa Wangediya
Idi appa or string hoppers is a staple food item made in Sri Lanka, either from rice, wheat or even millet flour. A special two-part device made from timber- the idi appa wangediya is used making this dish. Comprising of two cylindrical units- one of which is hollow and has a steel or wooden plate with sieves at the base. The dough is placed inside this hollow compartment and pressed downward with the other cylindrical unit- allowing the dough to flow out in thing strings which is then cooked over steam.
