Harischandra Thosai Mixture with Kurakkan is an instant mix for thosai (dosa) made with kurakkan (finger millet) flour, so the pancakes come out darker and nuttier than the plain kind. The 400g pack says it makes about 20 thosai.
Harischandra added its instant thosai, hopper and string hopper products in the 1990s, and its thosai mixtures carry the Sri Lanka Standards Institution mark for instant thosai mixture (SLS 1629). The yeast is already in the mix, so there is no overnight soaking or grinding.
How to use
- Mix with water to a smooth pouring batter and let it rest as the pack directs.
- Spread a ladle of batter thinly on a hot greased pan and cook until the edges crisp.
- Serve with coconut chutney, sambar or a potato curry.
