The Kaffir lime (Citrus hystrix DC., family Rutaceae), also known as kieffer lime, makrut, or magrood, is a citrus fruit native to Indonesia and widely cultivated across tropical and subtropical regions as a garden shrub or spice plant. It is especially prized in culinary and aromatic applications. The fruit is small with a rough, bumpy rind and contains acidic, slightly bitter juice. Its glossy, double-lobed leaves are highly aromatic and widely used in Southeast Asian cuisine to enhance the flavor of curries, soups, and stir-fries.
